Ingredients:
- 75g Einkorn Flour
- 2 large eggs
- 1/4 teaspoon sea salt
- 1 tablespoon maple syrup
- 120ml whole milk
- 1 tablespoon melted butter
Method:
- Whisk together flour, salt, eggs, maple syrup, milk and melted butter
- Heat an 8″ frying pan and lightly grease with oil
- Pour 1/8th of the batter into the pan
- Tilt the pan so that the better covers the entire pan and cook for about a minute, or until the edges of the crepe begin peeling away for the sides of the pan
- Flip and cook for another 30 seconds or so, or until both sides are nice and golden
- Top with your favourite toppings, such as sugar, lemon, honey, or fresh fruit and yogurt
Tip: Make sure your pan is nice and hot before adding the oil and crepe mixture
